As a leader of men, he or she coordinates the work of the entire brigade (from the clerk to the second), supervises the pace and quality of work, and guarantees the preparation of dishes in compliance with hygiene and quality standards. As the guarantor of the good management of the organic kitchen, he/she ensures that everything is perfect: communication, equipment, hygiene and resources.
